Ingredients
Prepare Chanay (chickpeas ) .
1-Fennel seeds ½ tsp
2-Cumin seeds 1 tsp
3-Bay leaf 1
4- Mace 1 piece, Cloves 2
5- Oil ½ Cup
6- Mustrad seeds ½ tsp
7- Onion) grinded 1 Cup
8- Ginger garlic paste) 1 & ½ tsp
9-Tomato pureed 1 Cup
10-Salt 1 tsp or to taste
11-Coriander seeds roasted & crushed 1 tsp
12-Turmeric powder 1 tsp
13-Red chili powder 1 tsp
14-Water 2-3 tbs
15-Chickpeas 500 gms Boiled with 1 tsp salt)
16-Left over water from boiled chick peas 1 Cup
Prepare Baturay ( Fry Bread )
1-All-purpose flour 2 Cups
2-Semolina 1/3 Cup
3-Sugar powdered 1 tsp
4-Baking powder 1 tsp
5-Salt ½ tsp or to taste
6-Yogurt ¼ Cup
7-Water ½ Cup or as required
Directions:
Prepare Chanay (chickpeas)
1-small frying pan,add fennel seeds,cumin seeds,bay leaf,mace,cloves and roast until frangnant and let it cool.
2-spice mixer,add roasted spices and grind to make a coarse powder & set aside.
3-pot,add oil,mustard seeds,cumin seeds and mix well
4-Add onion and cook for 3-4 minutes.
5-Add ginger garlic paste and mix well.
6-Add tomato puree and cook for 2 minutes.
7-Add mix,add salt,coriander seeds,turmeric powder,grounded spice powder,red chili powder and mix well.
8-Add water and cook until oil separates.
9-Add chick peas and mix well.
10-Add left over water from boiled chick peas and mix well,cover and put it on simmer for 6-8 minutes
Prepare Baturay ( Fry Bread)
1-In bowl,add all-purpose flour,semolina,sugar,baking powder,baking soda,salt and mix well. -Add yogurt and mix well.
2-Gradually add water and knead until dough is formed,cover and let it rest for 1-2 hours.
3-Take a dough,grease hand with oil and knead dough again.
4-Take a small dough,make a ball,grease working surface & rolling pin with oil and roll out dough with the help of rolling pin.
5-In wok,heat oil and fry until golden brown (pour hot oil while frying).
